Fresh Food Friday: Asian-Style Soba Noodle Salad

Going into the weekend, we’re all a little tired of that same old question: “What should we cook for dinner?”

Thanks to Woolworths this week, the easy answer to a fresh, healthy, easy-to-prepare dinner perfect for the cooler Autumn weather, is this Asian Style Soba Noodle Salad. Yum!

 

Prep time: 10  Cooking time: 10  Serves:  4

 

I N G R E D I E N T S M E T H O D

2tbs rice wine vinegar

1tbs soy sauce

1tbs honey

1/2 tbs wasabi

2 x 100g pkts soba noodles

2 bunches broccolini

1tbs sesame oil

4 garlic cloves, crushed

1tbs grated ginger

3 spring onions, thinly sliced

1/4 red cabbage, shredded

Step 1: Combine vinegar, soy, honey and wasabi in a small bowl. Set aside.

Step 2: Cook noodles as per packet instructions. Drain and rinse.

Step 3: Trim broccolini and cut into thirds. Cut stems into thin sticks.

Step 4: Place a large frying pan over medium heat. Add sesame oil, garlic,

ginger and spring onion, and cook for 1 minute or until fragrant. Add broccolini

and cook, tossing frequently, for 2-3 minutes or until just tender and bright green.

Step 5: Combine noodles, cabbage and broccolini in a serving bowl. Toss well

to combine before serving.

Tip: Soba noodles have a firm texture and earthy flavour. They are great

in soups, too.
