I N G R E D I E N T S   M E T H O D  

300 gram Cherries,

pitted + halved


2 tbs brown sugar


1 tsp vanilla extract


300 grams chocolate biscuits


80 grams butter, melted, cooled


300 grams marscapone


1 cup thickened cream


1/3 cup sweetened,

condensed milk


1/2 cup slivered almonds,



Cherries, extra

+ melted white chocolate to serve


Step 1: Place cherries into a large bowl with sugar and vanilla. Stir and set aside for 5 minutes.

Step 2: Line base of a 22cm springform tin with baking paper.

Step 3: Process biscuits in a food processor until finely crumbed. Add butter and process until

well combined. Transfer to prepared tin and press evenly and firmly over base. Transfer to fridge

to set while you make the filling.

Step 4: Place mascarpone, cream and condensed milk into a large bowl and whisk until thick.

Fold in almonds. Using a fork, mash some of the cherries to release their juice. Add cherries

with juice to cream mixture and fold through. Remove tin from fridge and spoon filling over

base. Smooth top and return to fridge for 4 hours.

Step 5: Meanwhile, line a baking tray with baking paper. Holding a cherry by the stem, melt

chocolate over boiling simmering water, dip into melted chocolate to coat halfway. Stand on

prepared tray and repeat with remaining cherries. Transfer to fridge until set.

Step 6: Loosen cheesecake by running a flat knife or spatula around the inside of the cake tin.

Remove tin and transfer cheesecake to a serving plate. Top with extra fresh and chocolate

dipped cherries. Serve.


Fresh tip: you can complete step 1 to step 3 of this recipe the day before. Just cover well with

plastic wrap and refrigerate overnight.

Note: vanilla extract is different to vanilla essence.
