Need to feed the hoards after school? This blueberry lemon poke is not only easy to make but a delicious afternoon treat.

450g Woolworths butter cake
1/2 cup lemon curd
90g cream cheese, softened
40g soft butter
3/4 cup icing sugar
1 tsp vanilla essence
1 tbs shredded coconut, toasted
Step 1: Remove cake from packaging. Using a thick chopstick, poke holes into
cake almost to the bottom. Fill with lemon curd. Push a blueberry into the top
of each hole. Spread any remaining lemon curd over the surface and chill
while you prepare the frosting.
Step 2: Beat cream cheese and butter together until smooth. Sift in sugar, and
beat until smooth. Stir in vanilla. Spread over cake and decorate with
remaining blueberries and coconut.
