150 grams Woolworths Select frozen raspberries
1/2 cup blueberries
1/4 cup caster sugar
1 tbs lemon juice
1 tsp cornflour
175 grams cream cheese, softened
395 grams, sweetened condensed milk
2 tsp vanilla extract
600ml thickened cream
Step 1: Stir berries and sugar in a pan over medium heat until berries release juices.
Stir combined lemon juice and cornflour into berry mixture and bring to the boil.
Stir for 2 minutes until thick. Chill.
Step 2: Meanwhile, beat cheese, milk and vanilla in a bowl until creamy. Gradually
add thickened cream and beat until thick. Spoon into popsicle moulds, alternating
with dollops of berry mixture. Freeze for 1-2 hours until firm but not frozen. Insert
a popsicle stick into each mould. Cover and freeze for 6 hours.
