Baked Chilli Drumsticks

Brrrr, it’s cold and with the drop in temperature comes…ROAST SEASON. First up this week, in our Wednesday Winter Warmers series is Woolworths Baked Chilli Drumstick.

6 Chicken Drumsticks
1/3 cup chilli sauce, plus extra to serve
1 egg yolk
1 1/2 cup panko breadcrumbs
1/2 grated parmesan
3/4 tsp cayenne
Mayonnaise, to serve
Lemon wedges, to serve
Step 1: Line a large roasting pan with foil and place rack into the pan.
Step 2: Pat chicken dry with paper towel. Mix chilli sauce with egg yolk.
Combine breadcrumbs, parmesan and cayenne in a shallow bowl.
Brush chilli sauce mixture over chicken, then coat with crumb mixture,
pressing on firmly. Chill for 30 minutes or overnight.
Step 3: Preheat oven to 220°c. Lay drumsticks onto rack in pan, leaving
space between so air can circulate. Spray well with oil. Roast for 40 minutes,
turning halfway through cooking, or until chicken is browned and cooked
through. Serve with extra chilli sauce, mayonnaise and lemon.
Tip: Freeze the leftover egg white in an ice-cube tray for future use.
You could even use it to make a frothy cocktail, such as a whisky sour!
