Back to School lunch box

Looking for ideas for a healthy lunch box alternative? Our guest blogger, Janet, has dished up two delicious snacks that are sure to keep your kiddies happy and full!
1) Zucchini Corn & Bacon Slice :
Ingredients:
2 Zucchini’s coarsely grated
1 Carrot Coarsely grated
1 Corn
2 Spring Onions sliced Thinly
175 g short cut Bacon finely chopped
1 cup Tasty Cheese coarsely grated
1 cup Self Raising Flour
4 Free range Eggs lightly whisked
1/4 cup Milk
2 tablespoon Olive Oil
Method :
To get started preheat oven your oven to 180*. Next grease and line your slab tin with baking paper. Place all of your dry ingredients into large bowl and stir thoroughly to combine. Next you need to add the egg, milk and oil and stir through to make sure they are combined . For some extra taste, you can season with salt and pepper.
Spoon your mixture into the prepared pan and smooth over the surface. Pop the mix in the over and bake for 40 mins or until firm to touch. Once it is set, place your slice aside to cool and then slice up for the lunch box.
2) Broccoli Hommus
They won’t even know it’s broccoli!
Ingredients:
1-2 cups cooked Broccoli pulsed
440g can Chickpeas drained
2 tbsp Lemon juice
2 tbsp Tahini
1/2 tsp Cumin
2 tsp Olive Oil
1 clove Garlic
Carrot, Celery, Cucumber raw sliced into sticks for dipping
Method:
This makes enough for 2 cups of dip! A nice and simply recipe, simply place all ingredients in food processor and blend until it reaches the right consistency. Slice and dice your carrot, celery and cucumber as you desire and serve up for dipping.
